Food for thought – Andong Soju Chipotle BBQ Sauce<\/span><\/h1>\n

  So, I thought I would do something a bit different from the normal restaurant reviews, and share a recipe that came out of one of our tours.  In 2016, Mi Jung and I traveled to Andong to tour their famous soju museum.  Soju, being the traditional Korean liquor   made from a variety of ingredients.  Sweet potatoes, tapioca, or in the more traditional and expensive Soju, wheat or other grains, which give it more of a whiskey flavor.  During the \u201ctasting\u201d part of the tour, I was surprised by the taste and though it would make a great BBQ sauce.  So, a gift box was purchased and it was quickly incorporated into one of the Jack Daniels & Chipotle recopies I used.  I thought I would share the recipe with my readers, which can be used on anything from ribs to chicken.  I hope you try and enjoy.  If you cannot find Andong Soju near you, you may also revert back to the original recipe and use Jack Daniels.<\/p>\n

Ingredients:<\/span><\/h2>\n

1 cup ketchup
\n\u00bd cup light brown sugar
\n\u00bd cup honey
\n2-4 chipotle peppers in adobo sauce
\n2 Tbsp apple cider vinegar
\n1 Tbsp Worcestershire sauce
\n1 tsp garlic powder
\n1 tsp smoked paprika
\n2 Tbsp Andong Soju (Or Jack Daniels whiskey)
\nPepper to taste<\/p>\n

Preparation:<\/span><\/h2>\n

Combine all ingredients in a food processor and blend until smooth.<\/p>\n

Transfer to a saucepan.<\/p>\n

\"\"<\/a><\/p>\n

Bring mixture to a boil, and simmer for 10 \u2013 20 minutes, (If sauce becomes too thick, add 1 -2 Tbsp of water.).<\/p>\n
